Moroccan Night!

Mondays …………. Seems to be a doomed day for everybody, my husband hate it. On Mondays he’s in an extra grump mood, which I’ve learned to ignore. I personally like Mondays, for me symbolize new beginnings, a chance to start over, I know it’s a big cliche, every diet starts on Mondays, but at the weekend we behave like Hooligans, we eat everything, we drink everything. Exercise? Ha!! If you can call going up and down the streets of Soho, Lower East, West village, East Village, in a Quest for the best wine bar, “exercise”. So, yah!! We exercise. And why we have to find the best wine bar? Well that’s something for later… stick around.

But back to Monday, this particular Monday I woke up feeling pretty good, happy, and peppy, (by the way, nothing to do with “Sunday” the national day of married couples to get laid, I’m not that cliché) I’ve changed mine to Wednesdays to be different. The morning was sunny and beautiful and I looooove sunny days.

So I went out to do my errands, very happy, feeling wonderful, singing a bit, all great. First stop, my doctors office to pick up a prescription, something I just have to renew, not big deal, right? Usually his office has nice pleasant ladies working behind the counter, not yesterday…. This little stomp girl that look like she wanted to kill somebody, what she lacked in inches she had in attitude. She looked at me and I felt goose bumps, so much hate…. So, I gave her a smile and tried to be extra nice, to see if we could interact. Noooo!!! Not all the niceness in the world would have changed that little pitbull. I really don’t’ know what happened to that poor creature this weekend, but I’m assuming it was pretty bad. So anyway I kept going with my business asking her about my prescription and about my doctor schedule, and she was like: I don’t have his schedule in front of me, I don’t know if he can send a fax to your pharmacy, I don’t know if he is working until 5 today. *Sigh* so I kept my smile but inside my head I was screaming already, YOU F…ING B…. WHAT EXACLY DO YOU KNOW? CAN YOU STOP B….ING  AND JUST DO YOUR F…ING JOB?

Needless to say I didn’t get anything, she told me that she would give him my note.Of course she didn’t, and this episode just set the tone for my day. So thanks a lot!!Now I’m part of the people, who hates Mondays. But in the end of my day, Pitbull girl was history in my mind and I decided to throw a Moroccan night. Really, look at this chicken, do I really have the time to think about downers like the pitbull girl

Moroccan chicken with lemon and olives

Ingredients

  • 2 teaspoons paprika
  • 1 teaspoon ground  cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly ground pepper
  • 2 tbsp olive oil
  • 1 chicken 3-4 lbs, cut into 8 pieces
  • Salt
  • 3 cloves garlic,
  • 1 minced onion
  • The peel of 1 lemon
  • 1 cup of green olives,
  • 1/2 cup of raisins
  • 1/4 chopped fresh cilantro,1/4 fresh parsley

Method

Combine all the spices in a large bowl. Pat dry the chicken pieces and put in the  bowl, coat well with the spices mixture. let the chicken stand for 1 hour or so. In a heavy bottomed skillet, heat the olive  on medium high heat. Add the chicken pieces, sprinkle with salt, (go easy on the salt, the olives are salty), sautee the chicken skin side down for five minutes. If you are using a clay Tagine, you will skip the browning step, heat only to medium heat and use a heat diffuser. lower the heat to medium-low, add the garlic, raisins and  onions. Let it cook in the end add the lemon peel,the olives and the cilantro.  Cover for  15 minutes. Garnish with some lemon wheels.
