Fiesta

Today was a freezing day, 18 degrees Fahrenheit. And I have to say… I had enough! I don’t like to complain, but isn’t enough ENOUGH? I’m dying to go out without have to put layers on top of layers of cloths. See some flowers and green leafs on trees. So tonight’s dinner was really rebellious I just ignored the cold and pretended that is summer and had a fiesta. La cucaracha, la cucarachaaaaa la, la, la, la, laaaaa. Freezing weather be dammed!

Guacamole 

  • 2 ripe avocados, peeled, seeded
  • ½ tsp ground cumin
  • 1 ripe, medium Roma tomato, seeded diced
  • ½ Cup minced sweet red onion
  • 2 Serrano chilies, seeded, minced
  • ¼ Cup chopped cilantro leaves
  • 2 Tbsp fresh lime juice
  • 1 or 2 cloves of garlic

Cut avocado in large chunks and mash coarsely in large bowl with a fork. Add remaining ingredients and blend gently – leaving some small chunks is fine. Taste and adjust seasoning.

Thank you, This Molcajete was one of the coolest gadget I bought. That and some margarita glasses, and you have a fiesta.

Cool guacamole mortar! I am dead jealous!
Not to mention the cool pictures. God knows it’s hard to shoot green mush :-)
