Peach and Fava Beans Salad

I have some sneaky vampire bugs munching on my herbs, couldn’t they just eat one leaf or two and then gracefully leave. No…they have to put a hole in every single leaf. And don’t matter how much I look for the bandits, I can’t find them. So today I asked my bug guy at the Farmer’s Market; and he told me that the bugs hide during the day and come to eat in the middle of the night. Just so you know, tonight I’m going to wait for them. If anybody has some tips on how to catch those vampire bugs or some organic way to vanquish them. Please let me know. I got beautiful peaches at the FM today and was wondering what to do with them. Cakes and crumbles came to mind, but in the end I decided to make a salad. Also it was the first time I used fresh fava beans. So I had to watch some video of how to. Enjoy.

Peach and Fava Beans Salad

Ingredients:

  • 2 cups shelled fresh fava beans
  • 1/4-cup fresh lemon juice
  • 1/4-cup olive oil
  • Salt
  • Freshly ground black pepper
  • 2 or 3 peaches sliced
  • Baby Arugula
  • Prosciutto
  • Shaved Parmesan cheese

Directions:

Fill a bowl with ice and water. Bring a large pot of salted water to a boil. Add the fava beans and cook until just tender, 5 to 6 minutes. Drain and shock in ice water. Drain again and remove outer skins. Place the beans in a bowl. In a small bowl, combine the lemon juice, olive oil and whisk until blended. Season with salt and pepper to taste. Pour the dressing over the beans and mix well. Add the peaches, prosciutto, the arugula and the shaved Parmesan cheese.

Hmmmm…. did you put a string of garlic around your plant babies? Maybe that would deter the vampire bugs??? If I was there, I would totally chant some plant voodoo so that they would fight the bugs themselves that way you would not have to worry about them yourself.
Peaches + Fava beans, huh? Never would have thought!!! Brilliant as per usual 😉

Hey Anna! This salad sounds so good. I’ve really liked adding fruit to my salads lately-so fresh and so clean, clean! By the way, we spray our herbs and vegetables with organic Neem every ten days, and it helps a lot. The neem is a bit pricy, but it lasts a long time!

I just love how the result here was completely unexpected. Peaches are so great in baked goods, but I like your stepping out of the box here. This salad looks so fresh and wonderful! Peaches will be showing up around here soon and I can’t wait!

Hope you got the bugs. My chard was overtaken by some similar sounding bugs. The salad looks delicious. Sweet, salty, crunchy, yummy.

I haven’t been able to eat peaches in years (a food allergy that I developed that still makes my heart and palate cry)… but this makes me want to pop an allergy pill and go to town!

What an interesting combination! The first photo of the peaches just made me want to *sigh* with comfort. 🙂

And as for bugs, I know exactly what you mean!!! I have the same problem, they are eating my basil leaves. And then, when they finally left (I didn’t really vanquish them as you had planned to do), now I have aphids. I just can’t win. 😛

I love peaches but it reminds me of the peach tree in my backyard. I’m valiantly trying to protect the little peaches on the tree from squirrels. I’ve found a cayenne pepper concoction that seems to be doing the trick…for now. My dad always recommended dishwashing soap to get rid of bugs. I recently had some bugs on my roses and I used it and it worked. Just put a little bit of dishwashing liquid in with some water in a squirt bottle and go to town on your veggies. I hope that works!

I have never read about this combination before…nice idea…
I love peaches with thyme and oregano and fava beans with cinnamon and ginger…I always eat them in that way, if they are fresh…never tried a salad…
